Dessert Diaries

Lava Cake

I have used this recipe several times with several different variations. The original recipe can be found in the Better Homes and Gardens Cookbook under "brownie pudding". I've found that the lava, or pudding part can be added to almost any cake-like product. I've tried chocolate cake, chocolate brownies and last night I tried using a butterscotch cake. They've all worked well, but the winning combination still goes to the brownie/lava combo with mocha icecream on the side.

Lava:
3/4 cup sugar
1/4 cup cocoa
1 1/2 cups boiling water
Whisk to blend

To begin, you'll need to prepare your cake or brownie of choice. Pour into one large cake pan or several smaller serving dishes. (I like using coffee mugs). Add lava on top of batter. DO NOT STIR. Don't ask me how, but it always sinks to the bottom while cooking. Cook in oven at recommended time and temp. Serve with favorite ice cream flavor.

Made it, LOVED it! EVERYONE should try this dessert. Easy and yummy!
