Dinner Diaries

So after all of that mumbo jumbo about meal planning, my last meal was one that I created on the fly. Our pantry was bare (today will be grocery day when Spencer gets home - grocery shopping is a family event, two carts - it's something to see really) and I wasn't in the mood for sandwiches. We had frozen tilapia filets. And rice. And I had some vague memories of an Alton Brown cooking show where he cooked fish in little foil pouches. So this is what I came up with.

Brown Rice
Tilapia Filets
Chicken Stock
Butter
Garlic
Lime
Raisins

Cook rice on stovetop with 1:2 ratio of brown rice and chicken stock.
Place fish in foil, season with salt and pepper
Combine softened butter with garlic, large pinch of lime zest, lime juice.
Smear over fish and seal pouch
When rice has soaked up about 1/2 liquid, add remainder of lime zest and raisins
Place pouches in 400 degree oven for about 10-12 minutes

Serve fish over rice.

This was actually pretty good. Spencer ate it, at least. And if he doesn't like something then he'll usually come back for PB&J later in the evening. I liked the tangy of the lime and the sweet of the raisins in the rice.
