Apple Hash & Omelets

Got this one from Rachel Ray. Very easy and the whole meal took 15 minutes to make. She used "real" apples and potatoes - I went for the frozen and canned varieties.

Frozen hash brown potatoes
Diced onion
Apple pie filling (extra syrup discarded and apples cut small)
Eggs
Cheese
Anything else you want to throw in an omelet

Soften onion in skillet with butter. Add potatoes. Cook until potato edges start to turn brown and onions begin to caramelize. Add apples and warm through.
In separate skillet, cook omelets.

That's all there was really. It was a nice twist to the "breakfast for dinner" meal. We are not usually hash brown kind of folks. But these were sweet, yet savory, yet crispy, yet soft. You get the idea.
