Mexican Cornbread

Mom sent us home with chili two weekends ago. I froze a batch and we had it earlier this week. I think I found this recipe from Rachel Ray. It worked very well with the chili.

1 box Jiffy cornbread mix (prepare according to box)

Add a dash of frozen corn, a scoop of sour cream and a huge handful of pepperjack cheese. Sprinkle some chives on top and bake.
