Dessert Diaries
I've gotten away from posting the dinner diaries lately. Truthfully, I didn't do much cooking over the holidays, but I got two new cookbooks for Christmas, so watch out! One cookbook is the Rachel Ray 365. One meal for every day of the year. Wow. I don't think I'll make it to the end of that book. The other I got from my Secret Santa at school. This was a huge surprise as these Secret Santa things usually turn out to be really silly and I end up with a ton of knick-knacks covered in music notes. (Because I am of course a music teacher and must love everything that has a music note on it). But this year I got the "Taste of Home" Cookbook. WOO-HOO!! I LOVE the Taste of Home Magazine. Big Granny got me a subscription to this and it really has good stuff in there. And now I get the cookbook too!!
Back to the point.....dessert.
I don't keep dessert around the house. If I do, I'll eat it. So I don't buy it and if I make it, then we'll eat on it for a day and throw the rest out. I have no self control. This is the only way I can cope.
But sometimes I REALLLLLLLY want a dessert. Badly, desperatley, MUST have sugar. In these extreme cases I will make something from scratch. Eggs, Sugar, Cocoa - you can always find dessert ingredients running around. Yesterday, I was too impatient even for this method. I was rummaging through the cabinets and found coconut left over from the ONEderland cake. Okay....what can I make with coconut? I tried to eat a bite plain. It didn't quite do the trick. Kept rummaging. AHA! I find a packet of Hershey's syrup that came in a brownie mix. I didn't add it to the brownies and just left it with my other "packet spices". Poured Hershey's syrup over coconut and VOILA! Sweet tooth was happy. Tasted just like a Mounds Bar. I suggest only trying this recipe if you are desperate for sugar.

YUM! I will have to give that a try. I love the mounds bars. Maybe an almond or two. Ymmmm. I can see desert tonight.
