Dinner Diaries

Little Caesar's Grilled Chicken

I was inspired to do this after a visit to my parent's house. They had grilled a whole chicken and it was delicious. Yummy, moist, smokey.....you get the idea. My next trip to the grocery store I brought home a whole chicken. This past Monday (apparently the last warm day we're going to have for a while) I got Spencer to fire up the grill for dinner. I rubbed Mr. Chicken down with all sorts of yummy spices. I even stuffed some inside for good measure. We put him on the grill on the top "shelf" over a low flame. I play with the kids in the yard. 15 minutes later we look over to see billows of smoke coming out of the grill. Not little billows. Large, white, bad billows. I open up the top to find Mr. Chicken completly engulfed in flames. His outside is DONE. But after only 15 minutes I knew that his inside was not. I sent Spencer and Easton to Little Caesars (only a mile away) for their pizza-pizza special. Mr. Chicken got put in the oven in hopes of salvaging some of the meat. The good news is - he turned out okay and made great sandwiches for the next week after we peeled off that first layer of yuck.
