Brunch and Baby Diaries
This past Saturday our Sunday School Department had a Women's Brunch/Bible Study. It was a really nice time. I brought a quiche. I looked up several recipes online and created this one by "cutting and pasting" other recipes I had found.
In a pie shell, layer the following:
Sharp white cheddar cheese
Thin cut white onion
Roma tomatoes
Fresh Basil
A tad more cheese
Pour in four (or so) beaten eggs mixed with a dash of heavy cream.
Today I'm taking a Chicken Pot Pie to a family that just had a baby. If you have a baby or are sick or just really hungry and I'm signed up to bring you food, then you'll be getting a chicken pot pie. This has become my staple. It's easy to make, easy to freeze (if they don't want to eat it that particular night) and tastes pretty good. I also made up this recipe several years ago. I didn't know how to make one and I just guessed. I liked how it turned out so I kept using the same ingredients.
Shredded cooked chicken
A package of frozen mixed vegetables (corn, peas, carrots, grean beans, limas)
A little bit - maybe one handful - of frozen pepper/onion mix (green peppers, red peppers, onions)
One can cream of chicken soup
8 oz or one small container sour cream
A good amount of dried "green" spices. Basil, thyme, oregeno. Or could use an italian blend
Add salt/pepper
Put in pie crust and add top crust. For fun, take the extra dough and make a fancy design on top. It's like play-dough for adults.

JENNY RADER BARHAM!!!! How are you?!!! I have been talking to Shannon and I saw your comments on her blog. I don't have one of these nifty pages, but I do have a myspace page. I just had a little boy at the end of January. His name is Xavier. I think I need to have one of these pages in order to share pictures and whatnot, but see as how I rarely have time to pee, much less write a blog when I am at home, it might get done and it might not. Maybe while I am "supposed" to be working here at work :) Anyway, you look great!!!! Your kids are ADORABLE! And Spencer looks very well taken care of! ;)
by the way, that pot pie looks delish!!! Very Martha of you! I'm wondering if that is homemade crust, though? My crust never looks that neat.
Oh my goodness!! How are you? I have to admit that I also have a myspace. I got it for some of my students and I don't really know what to do with it. Maybe you can inspire me. The crust is not homemade. It's the kind you buy in the refrigerated section and just roll out. I've made my own crust before but it's never pretty so I only do that when I'm making a pie that won't have a top to it! I can't wait to see pictures :):)
