Chicken-Sweet Potato-Broccoli Chowder
Just in case you read my last post and think that I've jumped off the deep end - rest assured, my resolve is not as strong as a girl scout cookie. I got my box of Samoas yesterday and ate the entire thing at once. I'm sure that broke every rule in the food universe, but it was soooo good.
And now I present, one of my new favorite soups! A friend posted this recipe on her facebook status one day. I bookmarked it and finally got around to making it a few nights ago. I was hesitant because I was skeptical of how all of those flavors would mesh - but it was very good! I will definitely make this again. Husband and all three children approved.
I deviated from the original slightly - here is my version:
Ingredients:
2 chicken breast
1 large onion
1 x-large sweet potato (peeled and cubed)
1 cup frozen broccoli
1 can chicken broth
1-2 cups milk
splash or glug of cream
flour
butter/olive oil
poultry seasonings (I did not have the bay leaf and thyme as suggested so I used this - worked great)
salt/pepper
Directions:
Saute onions in dutch oven (or your favorite soup pot) in butter and/or olive oil
Meanwhile - have chicken cooking in nearby pan
Stir in a heaping tablespoon of flour to onions. Cook for about a minute and then add broth, milk and poultry seasonings. Not sure how much - I just shook a lot in there.
Bring liquids up to temperature (not a boil) and add chicken, potatoes and broccoli. If you want your broccoli to have a crunch, add it later. If you want it softer, add now.
Cook until sweet potatoes are soft.
Add salt/pepper as desired.
Splash a little cream in there for good measure.
Serve with bread made in the bread machine that your awesome friends gave you when they were cleaning out their basement.
I have no idea why I take these pictures because they're horrible. But I am a jillion times more likely to make a recipe if I see a picture of the product, so there you go.

One of 'the rules' is to break the rules every once in awhile. Samoas (if you like them) are good reason to break the rules!
I think I will actually try to make this soup, mostly because you took a picture of it!
