Dessert Diaries

Magic Cookies from Paula Deen

I found this in one of my cookbooks and made them several weeks ago. There are only four ingredients and they are things that I always have in the pantry. I don't know how in the world these four things form a cookie but somehow it works (hence the "magic" part I guess).

Today was Camille's pre-school program and we were instructed to bring cookies. So - once again we made magic! Easton, Camille and even Claire helped roll them into balls and put their "thumb-print" on the top to flatten.

Ingredients:
1 cup peanut butter (can be chunky or smooth - I even used the all-natural version which tends to be a bit looser than other versions and it worked great too.)
1 1/3 cups sugar
1 egg
1 teaspoon vanilla

Mix all ingredients in a bowl until a soft dough forms. Break off small parts and roll into balls. Flatten ball gently with thumb on cookie sheet or use a fork to make criss-cross design. Bake at 350 for 10 minutes. Can be sprinkled with a little extra sugar for decoration when they come out of oven.
