Oven Pancakes
Easton wanted pancakes this morning and I wanted to be adventerous so I looked in my cookbook to see what Paula Deen would do. She had a recipe for Oven Pancakes that involved apple pie filling. I didn't have any so searched the web for oven pancakes and saw that they are also known as German Pancakes. VERY easy.
Directions:
In a cast iron skillet (or any oven safe skillet):
Warm a hunk of butter and any fruit you happen to have. (pictured below)
In a bowl:
Beat 3 eggs, 1/2 cup milk and 1/2 cup all purpose flour*.
Add to skillet and put in 350 oven. Cook for 20-25 minutes and sprinkle with powdered sugar when done.
*Paula suggest adding a teaspoon of sour cream and lemon zest to the batter. I had both, so I did!
EDIT - I wrote this while pancake was still in oven. Once it came out - it's a little dense. Both recipes (paula and german) call for all purpose flour but maybe self rising would help? Or using an electric mixer to beat eggs instead of my poor whisking abilities? Still great taste, just not as fluffy as a regular pancake. Maybe that's what makes it German?
EDIT AGAIN - After much research I've determined that they're supposed to be dense. One recipe suggested baking at 450 for only 10-12 mintues. I think I will try that and embrace the denseness.

Tried it tonight and it was great! I used frozen strawberries and it looked weird but taste great! I think my next go around I'm going to use apples and add cinnamon to the batter (and a mixer with the batter as well). Thanks for the recipe! It's YUMMO!
Ours was delicious, but required about twice as long to bake as you recommended. Maybe that was because we used a lot of fruit?
