Crispy Oven Fries

The trick here is in the wording. I've been baking sliced (round, wedge, sticks) potatoes in the oven for a while now, but it's hard to call them "fries". Much less, crispy fries.

But by golly - I think I've done it! I read online where a woman said to poke holes in a potato, microwave it for 5-7 min and then slice it up and put them in the oven. I tried to cheat and use the oven to do the microwave's job and got a really, REALLY good result. They're not McDonald's. Not even close. But...still a good fry for an oven variety.

Directions:

Cut potatoes into skinny, fry like shapes.
Toss with olive oil, salt, pepper and lay out on a sheet pan (not too crowded!)
Bake in 450 preheated oven for 10ish min.
Now turn oven to it's highest broiler setting.
Broil on super duper high for another 10ish minutes until skins start to blister and little brown spots form

The premise is that the first baking at 450 cooks the potato al dente and the second baking under the broiler crisps the skins and finishes off the insides. According to Food Network, this is how "real" french fries are made, except the twice bake thing is done with oil and a fryer each time.

The picture does little to show off their crispiness - just trust me.
