Chinese Apricot Pepper Chicken
I have no idea where I saw this recipe. I was flipping through a magazine, saw it on TV, online...no idea. But I remembered Apricot Preserves and Peppers. I figured that I couldn't screw it up too badly and just went with it.
Ingredients:
2-3 chicken breasts, cubed
1/2 (ish) jar Apricot Preserves
1 bag frozen Mixed Peppers and Onions (Or you could slice fresh red, green, yellow peppers and onions)
Olive Oil
Directions:
Cook Chicken in large pan with a little olive oil. After 2-3 minutes, add the peppers and onions. Continue cooking until chicken is almost done and peppers are nice and soft. Add preserves to pan and then put on lid so steam can finish cooking chicken and thin out preserves. If 'sauce' is not right consistency then you could add a little chicken broth to thin or a little corn starch to thicken.
Toss to combine and serve over rice with broccoli or other favorite Chinese-type veggies.
