Shortbread Cookie Raspberry Surprise
I made stir fry tonight and the kids were just picking at their plates. Camille asked, "How much do I have to eat? Do we have dessert?" This means - if there is no dessert then I am done eating, but if there is promise of chocolate in my future then I will gobble this food up. I had just bought some fresh raspberries, so I figured I could turn that into a dessert so I told them to clean their plates and we would have a treat tonight!
Spencer loves shortbread cookies and we always have butter, sugar and flour so shortbread was the winner. By chance we had a can of that Reddi Whip in the fridge from when we had guests over so shortbread + raspberries + squirty cream = dessert.
I took the cookie recipe and divided it 1/4. This makes 8 cookies - perfect for one meal and not enough to be left over hanging around the house tempting me late in the night.
Ingredients:
1/2 stick butter, softened
1/4 cup sugar
a few drops of vanilla
1/2 cup flour
Directions:
Cream butter and sugar together. (I used a wisk, no need to get out mixer). Add vanilla and stir in flour. When everything has come together, roll out into a disk and cut out 8 cookies. Since I was trying not to dirty anything up, I rolled them out on the cookie sheet using a juice glass as my rolling pin, and then flipped it over to cut out the cookies. Don't laugh - it worked. And that was two less things I had to clean!
p.s. The "surprise" part is that I completely covered up the raspberries with whipcream so they had to find the surprise underneath. This only worked for Easton. Camille and Claire declared that they don't like whipcream so they just got cookies with fruit on top. Weird girls...

Too bad you do not live closer to Big Granny. Wednesday night she sent us home with a pie, lemon squares, Cinnamon rolls and cookies. It was my belated birthday present. Now what is someone who is on a "low carb" diet supposed to do with all that?
