Snack Diaries
Tomorrow I'm going to Gatlinburg!! If it weren't so late I would say more about that. I had to finish the PTA newsletter for approval so it can get printed and distributed Monday morning when I return. I knew it would take most of the afternoon and evening so I'm right on track. I may even turn into a night owl if this keeps up.
Oh yes...Gatlinburg. It's customary to bring a snack on this wonderful weekend. I wanted to make the Pumpkin Pie Chex Mix but didn't realize that I had the wrong ingredients until it was too late. I bought the regular Chex cereals and I was supposed to get the cinnamon and honey versions. So I kind of used that recipe but made up my own based on what I had in the pantry. I can't say this new version will be printed on next year's Chex boxes, but I tasted it and liked it. I call it Thanksgiving Chex.
In small bowl, microwave brown sugar, butter, pumpkin pie spice and corn syrup until boiling. Stir and then pour over Chex cereals. Toss to combine. Microwave cereals in large bowl again for 30 seconds. Toss to combine again.
Toast pecans in skillet and add to mixture. When all is cool then add craisins and chocolate chips.
