Cheeseburger Soup

This is genius! I was at work last week and my coworker had brought this for lunch. She said it was a weight-watcher recipe and it was very easy. She said it included lean ground beef, carrots, onions, celery, chicken broth and velveeta. I pretty much stuck to that with a few tweaks.

Ingredients:
Lean  Ground  Beef
Bag of frozen Mirepoix (this is the BEST deal in the grocery store. Only $1 and all of the work is done for you!)
Chicken Broth, 1 box
Extra Sharp Cheddar Cheese, 8oz
Butter, Flour and Milk for Roux
Season Salt
Garlic Powder

Directions:
Brown the beef in the bottom of your soup pot. Season with generic "season salt" (this is what makes it taste hamburger-y, in my opinion). Add garlic powder, salt and pepper. When almost all of the pink is gone, add frozen mirepoix. Cook for a few minutes until veggies are soft and then add Chicken Stock. While that is starting to simmer, make a roux in a small saucepan with equal parts butter and flour (I used 2 tbsp). Add about a cup or more of milk and stir until it starts to thicken. Add shredded cheese. You will now have a VERY thick cheesy sauce. Slowly stir in cheesy sauce to soup mixture. The soup will thicken up a bit, but will not be thick. If you want a thicker soup, then use less chicken broth and make more cheese sauce.

Claire refused to try the soup (cheese and hamburger! what is wrong with that child?) but everyone else ate and liked. Camille and Easton got leftovers in their lunchbox today.
