Chicken Nuggets and Cheesy-flower

The chicken nuggets are easy. This is my way of cheating since I can't make fried chicken. I've tried 5 or more times and I can't get it right. The meat is never fully cooked and the crispy part is always way too greasy. I've even tried using Big Granny's iron skillet and didn't get any better results. But if I take chicken breast and cut it into little cubes, then I can come out with some great chicken nuggets.

I take the chicken cubes and toss in seasoned flour (salt, pepper and Italian seasoning), dunk in milk, and then back in the flour. Fry in skillet with oil.

The cheesy-flower recipe was given to me by a friend. Basically you steam cauliflower until it's tender. Mash like you would potatoes then add butter, salt, and shredded cheese. It looks exactly like mashed potatoes. But don't be fooled! They taste just like broccoli. Spencer thought it tasted a little like cheesy rice. Either way it was very good and we'll use it again.

Easton ate all of his chicken nuggets and wouldn't touch the cheesy-flower. Camille ate an entire bowl of cheesy-flower and wouldn't touch her nuggets. Go figure.
