Dinner Diaries

Meatballs Florentine

This is from Rachel Ray. Take 1 package of ground turkey, 1 package of frozen drained spinach, 1 chopped onion and 1 container of feta cheese. Mix together in a bowl with salt and pepper and form into small meatballs. Drizzle with olive oil (to help with browning) and place on cookie sheet in oven for 20 min at 425.

I had a commitment tonight so I didn't get to eat dinner with everyone. Spencer said that Easton and Camille both ate their meatballs! I had to confirm, was he sure that Easton ate something containing spinach? He said yes, because he got to dip it in ketchup.
