Dinner Diaries

Pizza-dilla

I've had a Williams and Sonoma gift certificate just burning a hole in my pocket since Christmas. The problem with that store is that even a $50 gift certificate will only get you one place mat and a wooden spoon. OR.......a new Rachel Ray cookbook! Okay, I got two cookbooks. One is a kids book for Easton to help me cook. All of the instructions are pictures instead of words. Very cute. Last night's meal is courtesy of Rachel and the "Express Lane Meals" book. I made some changes* but the idea is still there.

This recipe is really easy but uses three pans, so the clean up is a little time consuming.

Pan #1 - Chop and saute one onion in butter and olive oil.
Pan #2 - Saute a little garlic with red pepper flakes and olive oil. Then add one can of crushed tomatoes. Then add cubed chicken. Cook until chicken is done.
Pan #3 - This pan will be used for tortilla building and melting. I used a griddle. Place first tortilla in pan and cover with any type of smoked cheese. Add chicken/tomato mixture and some onions. Add fresh basil. Cover with second tortilla and cook until cheese is melted.

Cut and serve with cute little sour cream dollops on top.

*The original is supposed to mimic a pizza margarita and does not use chicken or onions. I added the chicken for Spencer and the onions because I love them. I was not able to use fresh basil because the grocery did not have any, although it would have added a lot.

Lol you sound like me. I can carry around gift certificates for months before I decide to use them. Wow, you’re right 50$ doesn’t go far. But about the cook books, how fun. It is always exciting getting a new cook book and try out new recipes here and there. Have fun.
