Dinner Diaries

Sausage and Rice Stew

From Healthy Cooking Magazine (offspring from Taste of Home). This is one of those dishes that I wasn't sure about but was very surprised when it was done. Good alternative to chili and soups when you are tired of making them at the end of the winter.

1 pkg smoked turkey kielbasa, sliced
1 large onion, chopped
1 Tbsp chopped jalapeno (this didn't look like much going in, but WOW it gave a kick)
3 garlic cloves, minced
1 Tbsp canola oil
2 cups water
1 can (14 0z) chicken broth
2 cans (15 oz) white beans, drained
1 cup long grain rice
oregano, thyme and pepper to taste
2 cups fresh baby spinach

In a dutch oven, saute the sausage, onion, jalapeno and garlic in oil until onion is tender. Add water, broth, beans, rice and seasonings. Bring to a boil.
Reduce heat; cover and simmer until rice is tender. Stir in spinach and cook 5 more minutes until spinach is wilted.
