Coconut Rice Pudding
This is from Healthy Cooking Magazine (offspring of Taste of Home) so it gives the low fat options. If you wanted to go full fat you could do that as well. I followed the low fat and it couldn't imagine it being any better. Creamy and yummy.
1 can (14oz) light coconut milk
1-1/3 cup fat free milk
1/2 uncooked white rice
1/4 cup packed light brown sugar
1tsp vanilla extract
1 tsp cinnamon
In a large saucepan, bring the coconut milk, milk, rice and brown sugar to a boil. Reduce heat, cover and simmer for 50-55 minutes. Remove from heat; stir in vanilla and sprinkle cinnamon on individual servings.
