Non-Tomato Salsa*
It is inconceivable to me that there are people out there that do not like tomatoes. Especially homegrown ones that show up late summer. You people are weird. But my husband is one of them (although he does like salsa and tomatoes hidden in various other places if they're outnumbered by other ingredients) so I won't hold it against you.
Found this recipe and made it this morning and let it sit in the fridge. Just had a nibble and it's very yummy. A good alternative for the tomato haters.
Below is the easy version - if you want more specific info then you can go here to Rachel's site and get the salsa plus the fish taco recipe that it accompanies.
In a bowl dump the following ingredients:
Zucchini (peeled and diced)
Tomatillos (drain from can, then squish their guts into the bowl, discard the skins)
Lime juice
Fresh cilantro
Dash of salt
Mix, then pop in fridge or serve immediately.
*And yes I know that tomatillos are technically a type of tomato, but not really for these purposes.
