Very easy to make (athough the 'rolling into a log' was tricky for me - probably easy if you make cookies frequently). The end taste was not quite as lemony as I wanted. More like a buttery sugar cookie with a lemon aftertaste.

Also very easy to make. Spencer LOVES shortbread cookies, so that's why I chose this one. The coffee flavor is a tad strong for me - I'd add only 1 teaspoon if I did it again. This one wins the prize for messing up the least amount of dishes and quickest prep.

OH MY GOODNESS THESE ARE SO GOOD!! Takes the most prep and makes the biggest mess - but WORTH IT. The recipe calls for pecans and the original called for dates. I used pecans and dried apricots. Both are equally good, yet taste completely different. After chilling the dough in the fridge it came out rather hard - not dough like at all. But some gentle (channeling my inner amazon woman) pressure with the rolling pin made it roll out nicely. (and easy to cut into strips). The kids loved rolling up the pecans and apricots and also dunking them in sugar. This one also wins the award for 'most fun for the kids'. And did I mention how yummy they taste??

OOOOH! That mocha shortbread sounds YUM. I'm definitely bookmarking that to come back to for Christmas baking.
