Parmesan Chicken Strips

Another fun idea from Ina Garten. Nothing earth shattering in this recipe, just a cute twist on the ever popular chicken breast. My sister has started using fresh bread crumbs (throw bread in a processor) and swears it makes all the difference. (I'm trying that next time) A while back I discovered how much cheaper it is to buy a wedge of parmesan vs. buying it already shredded. We just keep grating that wedge and it never seems to disappear. Use fresh parmesan plus fresh bread crumbs and you could even call this a fancy dish.

Basically you cut your chicken into strips and then dip them in dry (flour, salt, pepper), wet (beaten eggs), and then dry again (parmesan and bread crumbs). Cook in a skillet with butter and olive oil. Poke a stick through them and call it dinner.
