Broccoli Cheddar Soup
This is huge folks. Huge enough to jar me out of my blogging hibernation and post twice in one day. Tonight I made Broccoli Cheddar soup. It was a fairly simple recipe and I expected nothing out of the ordinary. And the soup was good. Very good. But not necessarily a life changing soup event.
I knew something was different when Spencer came home from work, looked in the soup pot, and said, "What's for dinner?". Really? You can't tell? No. He couldn't. The broccoli had been blended to smithereens. And I joked, "Well, if you can't recognize the broccoli then maybe the kids can't either." AND THEY DIDN'T! And they ate it! And there was no whining about broccoli! And...hold on...they all even said that they liked it. (But I think Claire only said it because Camille said it as she didn't eat very much of hers. But Camille and Easton ate their whole bowl and I consider that to be a victory).
So. Here it is.
Ingredients:
butter
1 diced onion
1 diced potato*
garlic
1 bag frozen chopped broccoli
1 quart (32 oz) chicken stock
1/2 cup all purpose flour
1-2 cups milk
8oz sharp cheddar cheese
Salt and pepper
BLENDER!
Directions:
- Melt butter in your pot
- Add onions and potatoes and garlic and cook until onions get a tad soft
- Add chicken stock and broccoli
- Bring to a boil and cook until broccoli is soft
- Add salt and pepper to taste
- Use an immersion blender (boat motor as Emeril called it) or pour into counter top blender and puree until broccoli is unrecognizable.
- In a separate bowl whisk milk and flour together until flour is dissolved
- Add milk mixture to broccoli puree.
- Stir until soup starts to thicken.
- Add cheddar cheese.
- Stir until melted.
- EAT!
*Most broccoli soup does not contain potato but I had one that needed to be used so I stuck it in there.
I used my handy bread maker and we had fresh bread to dunk in our soup. I'm thinking next time I'm going to make little bread bowls just like Panera.

I'm totally making this soup this week(end)! BUT, I want to know how to make bread bowls first. Do you know? I can certainly google it, just thought I'd ask you to see if you had some awesome way to do it :-)
Hmmm...My plan was to make dough in the bread machine and then split it into 4 equal parts (and maybe a baby one for Claire) and shape like gigantic rolls - let finish rising and then bake. Scoop out the top and add soup.
However - I like your plan better. Google may have a better way or perhaps the bread needs to be made differently (more dense - cook longer/less) to hold the soup.
Mmmmm, I really want to try this, and I think the rest of my family would like it, too!
Have you checked out Jessica Seinfeld's cookbook, Deceptively Delicious? There may be some things in there that could work for your kiddos. I've made a few things that have been great and one brownie recipe that was disgusting. :)
