Minestrone Soup
This is my new favorite soup obsession. I've made it twice already this winter and even though we had it tonight I can't wait to eat leftovers for lunch tomorrow.
Ingredients:
1 pound Italian Sausage
1 bag frozen mirepoix
2 cans cannellini beans
1 can diced tomato
1-2 boxes (32 oz each) chicken stock
1/2 cup (ish) Ditalini pasta
Directions:
Cook sausage and mirepoix in dutch oven until sausage is done and veggies are soft. Add beans, tomato, chicken stock and dried pasta. The amount of chicken stock depends on the amount of pasta used. The pasta will suck up the "juice", so start with one box of stock and once pasta is cooked, liquid can be adjusted. Bring to a simmer and wait for pasta to cook. Eat. Enjoy.
