Dinner Diaries

Crab Stuffed Potatoes from Southern Living

4 large baking potatoes
1/2 cup butter
1/2 cup whipping cream
2 cups fresh lump crabmeat, drained
1 cup shredded cheddar cheese
1/4 cup diced onion
salt
paprika

Hollow out potatoes leaving shells intact.
Mash potatoes with butter and whipping cream
Stir in crabmeat, cheese and onion
Spoon evenly back into shells
Sprinkle with salt and paprika
Bake at 425 for 15 minutes

I have to admit that fresh crabmeat cost $15 and imitation crabmeat cost $3. I'm not a big fan of crab, so I went with the cheap stuff. Spencer likes crab (even imitation) so it turned out okay. But I'd bet this would be REALLY good if you like crab and spring for the real deal.
