Mexi-cotti
I saw this on the Taste of Home website but cut some ingredients to make it easier and it turned out great. Everyone liked it - even the picky little ones.
Ingredients:
Ground beef
Black beans
Mexican spices
Manicotti shells
Salsa (I used medium)
1/2 cup (ish) water
Shredded cheese
Cook ground beef and spices in skillet.
Add drained beans toward the end
Stuff mixture into uncooked manicotti shells (this part is annoying)
Line shells in a greased casserole dish
Pour salsa over shells and add enough water so there is 1/2" in the bottom of the dish
Cover with aluminum foil and bake for 30 min.
Take out and add shredded cheese
Continue cooking uncovered until cheese is melty
Serve with sour cream, guac, whatever you like.
