Cheesy Chicken Dutch
From Taste of Home. Those people really know what they're doing...
You can click the link and do it the way Big Granny would - or you can read my directions which cut some corners.
Ingredients:
One pie crust (rolled individually, not in the pan)
Chicken breast
One bag frozen mirepoix (carrots, celery, onion pre-chopped - Kroger has them)
One bag frozen hashbrowns (potatoes pre-diced)
One bag sharp cheddar cheese, shredded
One can chicken broth
1/4 cup flour
1 -1/2 cup milk
Salt and pepper
Cooking oil
A dutch oven (you don't have to use this, but it makes it so much more fun)
Directions:
Cook your chicken in the dutch oven in a little oil until both sides are slightly browned
Add mirepoix mix and cook until veggies are softened
Add broth and potatoes (I did not use the whole bag - eyeball how many you want)
Let broth come to a simmer
In a small bowl whisk flour and milk
Add to dutch oven and stir until things start to look thick and bubbly
Add cheese and stir to mix it in
Lay crust over the top of the dutch oven and pop it in the oven until the crust is brown
