Dinner Diaries

Oh my goodness my husband is gone and I need something quick for dinner pasta

I know you're wondering - Don't you have anything better to talk about than food? No. It's either that or crafts and I promised to stay away from the crafts. We've been having some heavy religious talks around here with the 4 year old and 6 year old, but that will take a while for me to digest and repeat properly. Their minds are pretty incredible though.

Spencer is gone this week so I've needed quick dinners. Last night I made this one up on the fly and I'm quite impressed with myself. It only has 5 ingredients so I might enter it in a magazine contest one day and win a million dollars. Or...just write it in my blog so I can make it again when I need something quick.

Remember a few days ago when I made the pizza with bacon, spinach, alfredo and mushrooms? Well in my fridge were 3/4 jar of alfredo sauce, 1/2 bag spinach and 3/4 crate of fresh mushrooms all going to spoil if they didn't get used. So I scoured the freezer and pantry and found a bag of frozen cheese ravioli and can of rotel (I was looking for diced tomatoes and didn't have any - this actually worked better)

Ingredients:
Alfredo sauce
Fresh spinach
Fresh mushrooms
Frozen cheese ravioli
Can of rotel

Directions:
In a small skillet, saute mushrooms and as much spinach as you can cram in there until the mushrooms are soft and the spinach is wilted.
Meanwhile...
Boil ravioli in pan. When they float, drain water and return to stove.
Add alfredo sauce
Drain rotel and add to ravioli

Now, fix your children's plates with ravioli. Add one mushroom and one little wilted spinach leaf to their plate and watch them writhe in the floor like you are killing them.
Add the rest of the mushrooms and spinach to your own plate.
